Vegetable muffins are a hit!

You probably noticed by now, that we love muffins. Borut and the kids like to bake them and I love their simplicity. They make a delicious, simple and nutritious breakfast. And if you're running late, you can eat them on your way to school.

Maybe you don't find muffins healthy, but we found a super recipe. The main ingredients are zucchini, carrots, oats and almond flour. This means, that with this recipe, you'll have your kids hooked on vegetables. Does's it get any better than this? Yes it does. They are so simple to make, even the kids can do them. You just have take them out of  the oven ;-)

Here is the recipe for so called Superhero muffins (I love the title. Who wouldn't want to eat them).


2 cups almond flour
1 cup oats
1/2 cup raisins
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon fine sea salt
3 eggs, beaten
1 cup grated zucchini (about 1 zucchini)
1 cup grated carrot (about 2 carrots)
6 tablespoons unsalted butter, melted
1 teaspoon vanilla
grated lemon zest

Preheat the oven to 180°C. In a large bowl, combine the almond meal, oats, walnuts, raisins, cinnamon, nutmeg, baking soda, lemon zest and salt. In a separate bowl, mix together the eggs, zucchini, carrot, butter, and vanilla. Add the wet ingredients to the dry ingredients, mixing until just combined. If you like a more sophisticated taste, you can also add walnuts, currants or chocolate chips. Spoon the batter into the muffin cups filling each to the brim. Bake until the muffins are nicely browned about 35 to 40 minutes.  

We find the muffins sweet enough, but if you have a sweet tooth, you can add some maple syrup.

* The ingredients make 12 muffins. There are only 9 on the photo, because someone was very hungry ;-)
